I am trying to use GOG on a Mac. File only downloads as a Windows file? Does anybody have any insight that they could share?

Well... Not all games have Mac versions. If they do however, you can select your OS using drop down menu located just above files you're downloading.

First of all, make sure the product that GOG offers actually has a Mac version (many don't). Assuming it does, you can choose between installers for the different supported OSes by clicking where it says "OS" on the card for that game in your library (though it might work differently if you're using Galaxy), then selecting "Mac" in the dropdown menu, then clicking the download link for the installer.

There's also a number of Windows-only games that work perfectly via Wine. You may want to check out paulthetall.com and their Porting Kit.
