I got the most recent GOG Galaxy update but im really interested in following the development progress of this. Is there anyway I can view a changelog of the recent updates?

These just seem to be showing requests and what the known issues are for Galaxy? Is there like a list of everything they've added and fixed up to the current update? If so, I can't seem to find it

Not really, you can turn on staff only post which makes them more easy to find... the changes are posted through out the thread. You can do the same with the old alpha thread to find changes posted in it.

The changes for the beta so far are mostly posted to page 2:
