Ok, it was hard to find anything missing from the lists here, but I found some (and was surprised by a couple).
Firstly, I must once again mention The Journeyman Project series, though it has been mentioned before. They are collectively my "Best Game of All Time", so would love to see them here. Actually it would be even more amazing if GOG were somehow able to convert the JP1 remake 'Pegasus Prime' to work on XP/Vista, as it was only released for the Mac.
Anyway, on to the exclusives:

I just wanted to pop in and put in a request for Blood. The more Build engine games, the better.
Id like to see some of the adventure games likes King's Quest, Hero's Quest, Space Quest, and Liesure Suit larry on here. I would totallly purchase all of them :P

A few DOS/Win9x-era games:
Armored Fist 2 (Novalogic)
The retail version doesn't work in Vista any more and configuring DosBox for it is a pain. Would love to see a GOG reworked version of this.
F-19 Stealth Fighter (Microprose)
Still the only proper stealth flight game there is. Was originally released for the Amiga and Atari ST, but there was also a DOS version (which I have) so presumably GOG could sell that if they could get the rights
Blood Money (Publisher: Psygnosis, Developer: DMA Design)
Another Amiga/Atari ST game. Wikipedia says there's a DOS version but I've never come across it. Brilliant arcade shooter from the developer which would later be renamed Rockstar North. In other words, this is the first game ever made by the devs that created Grand Theft Auto. Worth putting on GOG for its historical value as well as the brilliant gameplay.
Team Apache (Publisher: Mindscape, Developer: Simis)
Late-90s helicopter game that managed to tow the line between arcade and simulation quite well. Even managed an early version of squadron morale management. Another Win95/98-era game which won't work on Vista without the black magic of GOG's team.

Currently I don't have many games on my mind. Actually I would only wish for "Redline - Gang Warfare: 2066" ;) I don't really know if this is a "brilliant" or "very bad" game. I've played this a lot when I was young, and it would be nice to play it again.

Uncharted Waters: New Horizons.
Very rare for the PC, but it was available. And an great game.
The games I would most want to purchase through GOG, playable under Windows XP, would be:
Star Control 1

Star Control 3 (especially 3)
Archon
Archon Ultimate
M.U.L.E.
Magic Carpet
Dungeon Keeper
The Horde
Hex (the Mark Of The Unicorn game)
These I would instantly lay down money for. Instantly. Without a second thought.
