Iron sights, man, iron sights. S.T.A.L.K.E.R. aims at realism, so you should be using iron sights (or ideally a scope) whenever possible, otherwise you suffer a severe accuracy penalty. Moving incurs an additional penalty. This is by design. If you want to run around while firing off shots and looking awesome S.T.A.L.K.E.R. is not the game for you. :)

It also helps ALOT if you play it on the hardest difficulty settings seeing as easy doesnt just make your enemies guns woefully inaccurate it does the exact same thing to you. Seriously, playing on the hardest setting and doing sensible things like use AP rounds when shooting a flak jacketed person, I never had the same sort of complaints about inaccuracy and unreasonably tough opponents others have had.

But it doesn't really make any difference, because the bullets completely ignore the laws of physics. You can put the iron sights of a rifle on the center of someone's chest from twenty meters away, fire a full magazine of 20 or 30 rounds and miss with every shot.
In the real world you miss with a rifle because you don't aim properly, not because bullets come out of the barrel in random directions.
The only time I ever had random bullet patterns was when firing from distances where bullet drop came into effect. If you've ever fired a weapon that fires burst of full auto, good luck trying to keep all bullets on target. Even in burst your bullets will go up and usually to the right or left. Otherwise aiming wasn't a problem at all, even with the MP5 or AK74SU
I'd go with Vault Dweller. He can swig some Nuka Cola and kick some ass, while the Marked One fights with the more true-to-life (yet less fun) controls and some bad bugs.
