Why GOG removed bonus/goodies for this new release of classic Fallout titles? Any reasons?

GOG didn't remove them. The original release, with the extras, was provided by Interplay. The current version is a Bethesda release. GOG only gives you what the developers give them.

I doubt it, though you'd be better off asking Bethesda.

IIRC, a blue mentioned that GOG/Bethesda didn't want to hold up the release as they, Bethesda, was unsure about whether or not they had the rights to the assorted extras. GOG was going to follow up, but how well they can get Bethesda to find out the rights situation I couldn't say.
