I've purchased this game a few months ago and I'm about to at last try it.
Well, I've read here and there that GoG version isn't the most complete and up to date Fallout experience one can expect.
So, can someone give me some advice on what's important to add such as non-official patches and must-have mods?

Children patch for sure. Other then that no other mods recommended for the first playthrough.

It's not only the GoG version - initial releases of Fallout had children included, but at some point, someone got a great idea of removing them (it's OK if you kill an adult, but a kid? - hell no!).
What annoyed me about removing the kids was that they're actually still there...they're just invisible. I believe it was in the Den where I was getting pick-pocketed by the invisible little bastards.

Only the first one. Fallout 2 is intact. But frankly, it's not like there is any problem with that. One patch and you play the game like it was intended.
Will installing the mod that puts children back in the game fully, corrupt my saves or anything like that?
If I remember correctly, the children patch changes only graphics assets, so that alone shouldn't break your saves. The censored version still has the kids in the game, only their graphics sprites were nulled, so they can't be targeted to attack, but they may still get killed by indirect fire like burst weapons, grenades or just a missed shot directed towards someone else. You can still get the childkiller trait if you do that. I've never played the censored version, but I guess it can be really confusing if something like that happens.

To be on the safe side though, I strongly recommend backing up your whole Fallout folder (which includes your saves) when making any changes to the game, just in case something goes wrong. Once I managed to break my whole save pool in Fallout 2 (all 10 saves) because the car was bugged. I was doing proper rotating saves for about half a day when my game crashed, when I launched it again I couldn't load any of my saves, they were all corrupted.

Fallout has nice and forgiving code too, allowing you to play the game by just copying the files, you can even play different versions on the same computer if they're in different folders, just make sure the .ini file points to the right folder for the data.
