Do you still need to make purchases for all those bundles to complete the game? I see Gun Psycho, Harran Ranger for example as optional content for purchase.

They aren't included in the game, no. You have to purchase them separately.

They give access to a few new weapons, so they're not entirely cosmetic, but I would say they're pretty far from being essential.
