After installing & running Dragon Wars for the first time I selected EGA under the assumption that that was the most current (modern) selection. The result was 4 color graphics limited to teal, pink, black & white. How do I reset the video mode so I can select a new video mode & what is the correct selection for full color mode that matches the screenshots displayed on the games page here on GOG.com?

Usually, you can go to the install directory, and look for a config short-cut.

As per the included reference card you need to run DRAGON with the CONFIG modifier. To easily do this, edit the dosboxDragonWars_single file in the DRAGON WARS game directory.

So The final lines which look like this:
cd DRAGON
DRAGON

cls
exit

Should become:
cd DRAGON
DRAGON CONFIG

cls
exit

Now running the game should bring up the initial choices menu. Once you are done choosing and saving your new choice, simply revert the line back to just "DRAGON" to keep the menu from coming up each time you play. Of course uninstalling, then reinstalling the game should do the same though I assume you would loose your saved game.

Oh and as a side note, I believe choice "E VGA/MCGA" is the highest colour mode available out of the options.

Thank you both for taking the time to address my issue. @crimson_twilight Editing the "dosboxDragonWars_single.conf" file the way you described allowed me to select the correct video mode. Thank you again.
Concerning the optimal video settings, I think the game uses an EGA palette and VGA/MCGA is there for compatibility reasons. Thus selecting either EGA or VGA should give you optimal results.
