as for the new DLC i know, i wanted to jump back in Cvstodia when it was released elesewhere and i spammed in every social post from the devs "when will this come to GOG?" but i am willing to bet it's not GOG's fault if it's not still here, as stated elsewhere, probably there's some undisclosed temporary exclusive policy or something, have patience though, eventually it will come, and this great game has already a ton of content to be loved even without the DLC.

as for the bugs:

i'm sorry that you experienced all these bugs, i remember i had something wrong going on with my time spent getting killed from Crisanta, the disappearing offscreen charge brought back memories... either way, bugs are commonplace in software, they are integral part of the development process and sometimes we gotta be patient.
i did work a long time in software quality assurance and i can tell you... some problems get never fixed, even for years and in the "highest" of places.
sometimes they do, though, so cut the guys some slack, this game is one of the best metroidvania ever and the guys did a great job, if you are willing to go over some of the issues you will have a great time.

and you did well reporting your problems in hope that someone reads them.

I may have sounded hateful, but its not what I really think of the game, You see, I absolutely loved it and had great fun completing it. Even started second playthrough.
Also, I remember their separate save problem, which occured right after release. It saved in different slots depending on whether game was launched through client or outside of it. And they fixed it, so i have high hopes for their work.

Hello, would like to report a weird bug
I keep randomly loosing progress, being reset to an earlier state
for example, played through about 2 or 3 sessions of progress, with no issue, then randomly back to the first save point/prie dieu when I started the game again.

The guilt trapped on spikes thing keeps going on. I'm near the end of the game, I've destroyed all the statues and have some guilt stuck over the stakes.

I'ts my first playthrough and the second time I've seen it. So that's that.

p.s.: The guilt can be recovered in the church of Albero, but this is a pretty annoying bug, nonetheless.

A map related issue:

When you find a mourning fountain, that room is supposed to be marked on the map with a bile vessel icon. However, the fountains at Mother of Mothers and Library of the Negated Words never receive the icons.
