So I just got Bioshock 1&2 on GOG through a sale. My computer isn't amazing, but it should be able to handle Bioshock (original, not remastered). Only problem is that whenever I try to switch V-sync off or change the resolution (the resolution defaulted to 1366), the screen turns to white and the game crashes. Is there a fix for this? (my computer is a dell laptop, 32 bit).

No luck for me either. If I try to change the resolution it locks up (Bioshock 1 Non-Remastered)

You could try forcing a different default resolution.
Go to %APPDATA%\Bioshock and edit bioshock.ini, setting the desired values in the following lines:

FullscreenViewportX=YourWidth
FullscreenViewportY=YourHeight
MenuViewportX=YourWidth
MenuViewportY=YourHeight
