I'm pretty sure everybody has, until they get used to the mechanics of it. Spell triggers are great for getting around some of this, as they cast instantaneously. Just as an example, you can have your cleric cast Aid on you while you cast Resist Fear, then immediately fire your spell trigger that has Protection from Fire, Stoneskin and/or Blur/Mirror Image. Having said that, you might also want to use that trigger as an offensive one, especially against dragons: Lower Resistance x2, Greater Malison. :)
Another tip is to cast longer-lasting spells first.

Which is why it is always important to read the spell descriptions in a priest/mage's spellbook.
The duration of a spell is important to know b/c there is huge difference between instantaneous and a spell that lasts half a day (in-game terms).
The casting time is also very important to know the difference between a spell that is cast instantly (0) and a spell that requires a longer chant to cast successfully without interruption (8).
Pausing reduces the in-game time used for buffing.

Also, auto-pause on spell cast. This setting can be quite useful (assuming you aren't doing a real time speedrun).
