Hi, I have bought both BG1 and BG2 from GOG today. I think there were official patches and unofficial fixpacks back in the day.

Do I need to apply any official patches, and if so where can I get those?
With regard to unofficial fixpacks, can you guys recommend me the best overall fixpack to resolve bugs?

Just look at the stickies at the top of the Baldur's Gate Forums here on GoG. You can get all information there +links to fixpacks and other mods. You don't need official patches.
The GOG version already has the latest official patches applied. For unofficial patches and mods, checkout the three sticky posts at the top of the forums.

On your first play-through, I would recommend only using the Widescreen mod and Baldurdash fix pack since they're mainly fixes (or visual improvements) and don't alter the game content in any significant manner. On subsequent play-throughs, start adding in more mods for extra variety and surprises, to keep the game fresh.
I just found the version no. of my game. It is v1.3.5521 (options screen). That is much higher than what I could pull up from the web (that is at v1.1.4315).

Does GOG distribute a customized version?
And do all GOG games come fully patched?

I'm not sure about your first question, but 98% of the time the GOG version is fully patched with official patches (but they don't do fan patches most of the time).
By 'customzied' I refer to a special GOG only version. Because the version number does not tally with the official disk versions (regular versions went up to v1.1.4315), whereas GOG version which I got says its v1.3.5521

I believe v1.3.5521 is the patch to Tales of the Sword Coast, not a custom GOG patch. They usually don't do customized versions beyond making it work in Windows Vista/7.

I can confirm that 1.3.5521 is the official Tales of the Sword Coast patch.
