Say, after you've dumped Imoen (to, say, make room for Coran), where do you find her ? At the exact place where you've let her ? I didn't dare to leave her at the bottom of the Nashkel mines, when I met Xan there...

Generally speaking, I freak out whenever I meet a new potential companion, because I'm never sure where/if I can find those I leave behind to make some room for them. And I want to maximise my freedom to swap companions on a whim. Is there a consistent logic about where to meet them again ?

I believe when you let them go that there's an option to either 'stay here', meaning they stay where you booted them out, or you can tell them to go to the Friendly Arms Inn. This may be something added in by the BGT though. Not sure. My suggestion is to fire up your game and give it a try. If it doesn't work, you can always just reload your save.
There is no option to tell NPCs where to go without mods. Generally speaking (in vanilla BG1) they stay exactly where you dismiss them. I tend to go back to the Friendly Arm Inn if I want to dismiss somebody, and do it there. It's a conveniently central place to pick anybody up again, if needed. Be aware that if an NPC is unhappy (when you dismiss them), they will wander off into the sunset, never to be seen again.
That is a bit annoying. Imagine a theoretical situation where I'm exploring a multi-level mine that I intend to flood on my way out, and some dwarf encountered in there proposes to join my already full party. If I refuse, I'll drown him and never see him again, and if I take him with me I doom another party member to die in there ?

Imagine a theoretical situation where you have an established party, and you kick one of them out to pick up some prisoner in a mine. Said party member says: "Stuff you, then... I'm off. Bye-bye!" You never see your former comrade again. And deservedly so.
Of course, imagine a situation where you're exploring, and you rescue/help a stranger and they offer to take up with you and the rest of your party... and you say "Sure, we'd love to have you" because there's no odd arbitrary limit to the number of people you can invite to adventure with you.

Ah, but by necessity there is always a limit, even in real life. Logistics demands it, and there is no support network for CHARNAME and Co.
If you are using Tutu or BGT you can install BG1 NPC Project which has component to send NPC to wait in inns. You don't have to install anything else from that mod.
Or Sword Coast Stratagems, which has similar component, but I would recommend NPC Project as Stratagems is bigger and you wold need to skip more things if you want only this.
I don't know if there is something similar for vanilla BG.
