Are there any fantasy works that deal with the theme of Arcanum ie a world where magic and technology are in conflict? Or a fantasy world where magic is dying and being replaced by science and technology?

The only one I can think of is the 'Apprentice Adept' series by Piers Anthony. Any others out there?

Thanks!

I read a really fun and interesting short story by Roger Zelazny called Manna From Heaven, set in Larry Niven's Warlock universe. While magic and technology aren't precisely in opposition there, the rise of technology is at best barely bringing things back around to the standard of living the wizards remember from days of yore, before they began to run out of the world's limited resource of mana.
I've not read Niven's book (The Magic Goes Away), but I've read what it inspired in Zelazny (who's quite excellent) and am otherwise rather fond of Niven as well.* I think I've read enough Niven to give a general recommendation there.

* I've always enjoyed his Known Space setting. Truly obsessive Star Trek fans might recognize the K'zin, originally written in Niven's story "The Warriors" in 1966, while Wing Commander fans might recognize the probable inspiration for the Kilrathi.
Apparently the Russian RPG "A Farewell To Dragons", which did not get very good reviews unfortunately, was based on a Russian novel called "Not the Time For Dragons" which has a similar concept to Arcanum. The novel was co-authored by Sergei Lukyanenko and Nick Perumov. Sergei Lukyanenko wrote the Nightwatch series which I have read (translated into English) and it is really excellent, so I was interested in reading Not the Time For Dragons but I don't think it's been translated into languages other than the original Russian.

Other than that I don't know of any books with the magic vs. technology concept. I am currently reading the Book of the New Sun series by Gene Wolfe, which is set in the very far future where the lost technology of mankind often seems like magic, but that's not really the same thing. The series is really good, though, so I highly recommend it anyway.

The latest in the Mistborn series by Brandon Sanderson has some similarities. Some people in it have innate abilities to manipulate metals to perform "magic-like" feats. The latest book introduces firearms and other modern tools.
Hmm, there's a potential for a gold mine here. Aspiring writers, assemble!
