Judging by the Wallpapers, it seems GOG does have clean, big versions of the title artworks to at least ROK2 and 3. Is there any chance for those to get added as bonus material?

That would be nice to see for sure.
In my opinion I think GOG does a great job in this area of giving users additional content. Much more than any other digital distribution source I know of anyway.
